Banana Lemon & Honey Muffins

The muffins originally were lemon and blueberry but I turned it into banana, lemon and honey muffins.They were light inside,with a crunch top which was great. When I created this recipe I simply chucked in what I thought might go together and they turned out pretty good.....

Pink Vanilla Ombré cake

For this layered cake I got a bit creative and wanted to add a pop of colour so I thought to make an Ombré cake but not the typical one. When creating this cake, to be honest I didn't evenly divide my batter .That then caused my top layer of cake to become a bit to thin. Also I was in a bit of a rush and I didn't have time to refrigerate it, so it started to crumble Whoops!!.........

Orange-Lemon Olive Oil Cake

This Orange-Lemon Olive Oil Cake was originally just orange but since I ran out of oranges I added lemon. The combination turned out great and I always enjoy mixing citrus flavors because it  gives you something different.  The cake is a large recipe and will serve about 12-14 people generously . It is quite tall and has a light crumb and a dense flavor.When I served this, it was gone very quickly and everyone seemed to love ......

Cake Bites

Made with plain flour these cake bites are slightly dense and crumbly. Perfect base to add what ever you like. In this batch I added a seed mix which had sunflower and pepitas seeds. The seeds added a bit of crunch and texture but also I enjoy the taste. In the original recipe she added dried chopped up fruit, but feel free to play around with different ingredients until you get the perfect .....

Toffee Frosting


This is a new recipe I found. It's a toffee flavor frosting, pretty simple but great with cupcakes that are plain or caramel flavored.The frosting takes about 35 mins to make which is perfect while your cake/cupcakes are cooling. You an pipe it or just use a spatula giving you more of a rustic look.

Black Forest Cake

This week I felt like making something a bit different then my usual stuff so I decided  to make a Black Forest Cake. The Black Forest Cake is probably one of the classics, I have so many memories of birthdays where they had a Black Forest Cake with the maraschino cherries, that I never really liked. This version of Black Forest Cake has Layering Chocolate Cake with a Chocolate Mousse, Morello Cherry fillings and Whipped cream.

Lemon Olive Cake

It's one of the best lemon olive cakes I've tried. The cake is very light and has a soft,crumbly texture. I would recommend using a high quality olive oil, if you can afford it,but I use a standard brand which still tastes great. The amount of lemon in the recipe adds an amazing citrus flavor

Light Vanilla Cupcake 1

This is my go to recipe for vanilla cupcakes. This one is from Glorious Treats who had done all the hard work to create this recipe. The reason I love it is because its a great light cupcake ,giving you the "perfect texture" that a box mix gives you but with the homemade taste. The recipe can be made using a whisk or stand mixer making the cupcake a fast, easy worthwhile recipe.
