Mini Doughnuts

I stumbled across this recipe while searching for some doughnuts to try for my recipe box. I found this one is great,especially if you're looking for a very easy, quick and reliable recipe. They turned out perfect the first time I made them.
These mini doughnuts are slightly crispy on the outside and fluffy in the inside. You can modify the recipe by adding more sugar to the dough if you just want to dust it in icing sugar or use the icing to finish it off. This is perfect for the kids or a get together with family and friends.

This recipe is adapted from- Just a Taste 


Ingredients 

Icing 
-1 1/2 cups Icing Sugar
-3 to 4 tablespoons Whole Milk
-2 teaspoons Vanilla Extract
Doughnuts
-5 cups Vegetable Oil, for frying (approx.)
-1 cup Milk
-1 large Egg
-1/4 cup Unsalted Butter, melted
-2 cups Self-Rising Flour 
  (or 2 cups all-purpose flour
        2 Tablespoons sugar
        4 1/2 teaspoons baking powder
        1/2 teaspoon salt)


Method

1) Icing: Sift the icing sugar into a small bowl. Add the milk and vanilla extract, stir continuously til smooth. If the icing is too thick add a bit more milk and if to thin add more icing sugar. Set aside.
2) Take a heavy based pot, place the vegetable oil in the pot, heat the oil over a medium heat.
3) Whisk the milk and egg together 
4) Sift the flour into a large bowl,stir the milk-egg mixture in, then add the melted butter. The mixture will create a soft dough 
5) By now the oil should be hot, (test by placing small scoop of batter into oil, if it starts to bubble and make it golden brown,it's ready.) Scoop about 1 tablespoon of batter into the oil, be care full not to over crowd. Each side should take 2 mins or until golden brown on both sides. 
6) Place on paper towel to drain off excess oil,then let them cool slightly. If using the icing dip each one in the icing mixture.Place them on a wire rack ,over a baking try to let excess icing drip off.
7)Serve Immediately

Tips & Notes 

* Use a ice-cream scoop to get the perfect shape but a tablespoon is fine its gives it a rustic look and feel to the doughnut. 
* Make it your own, use different types of icing or dips- chocolate,caramel or jam.
