Toffee Frosting


This is a new recipe I found. It's a toffee flavor frosting, pretty simple but great with cupcakes that are plain or caramel flavored.The frosting takes about 35 mins to make which is perfect while your cake/cupcakes are cooling. You an pipe it or just use a spatula giving you more of a rustic look.

Will Frost 12- 16 cupcakes or an 8 inch cake

Ingredients 

Frosting 

- 110g butter
- 1 cup tightly pack dark brown soft sugar (220g)
- 1/4 teaspoon salt
- 6 tablespoons milk
-  2 1/2 sifted icing sugar (extra if needed)

Method


  1. Place butter in a saucepan on a medium-high heat. Once melted add in the brown sugar and salt, then whisk. Bring to the boil and boil for 2 minutes, whisking constantly.
  2. Take it off the heat and add the milk while stirring. Return it to the heat and bring to the boil again.
  3. Once it has started boiling remove from the heat and pour into a medium bowl, allowing it to cool to lukewarm (about 20-25 mins)      
  4. When it has reached lukewarm temperature you can add the sifted icing sugar and stir in.
  5. Add more milk or icing sugar to stiffen or smooth out the frosting.  
  6. You can leave it too cool and thicken or ice the cupcakes or cake like that. 

Tips & Notes 

 * At step three you can use the toffee mixture as a syrup. Filling the center of cupcakes or pour over a warm dessert.
* If piping the frosting, the original recipe will pipe a soft swirl rather than stiff high swirl. For that add more icing sugar at the end.
