Banana Lemon & Honey Muffins

Since I was home today I thought I would bake some muffins. Got a bit creative and adapted a recipe to what I had at home. The muffins originally were lemon and blueberry but I turned it into banana, lemon and honey muffins. They were light inside, with a crunch top which was great. When I created this recipe I simply chucked in what I thought might go together and they turned out pretty good thanks to a great base recipe from Lovely Little Kitchen .

  8. Fill the muffin tray 3/4 full and sprinkle 1-2 tablespoons of the crunchy topping on top.
  9. Bake for 3 minutes and then reduce the oven to 160°C and bake for 18- 23 minutes until the muffins have a golden top and spring back at the touch.
